After much contemplation, I’ve finally decided to do the unthinkable. Yes, you guessed it. A second Instagram. I’m so excited to start this new project, which will combine my health, fitness, food and Paleo tricks/tips/inspiration with my writing passion. Follow me @eat.run.write

If you hadn’t heard it by now, chia seeds rock. Packed with omega-3 fatty acids, protein, calcium and fiber, these tiny pellets have antioxidant powers that will keep you satisfied and energized throughout the day. Because chia seeds and chia pudding are Paleo friendly, I decided to take a stab at making this deliciously nutty breakfast/snack/dessert in my own kitchen. Thanks to some tips from fellow blogger and Gator @wholefoodblog (Gaby Nunez), this recipe is my new go-to.
(Makes roughly 2 servings)
1 cup Califia Toasted Coconut Almondmilk Blend
3 tbs. chia seeds
1/2 ripened banana
1-2 tbs. cinnamon to taste
** Fruit, nuts, unsweetened coconut or any other toppings of your choice!
1. Combine the milk, chia seeds and cinnamon in a plastic, airtight container. Mix thoroughly.
2. Mash the 1/2 banana in a blender or by hand, making sure there are no chunks left.
3. Add banana to the container. Put the lid on and shake vigorously.
4. Refrigerate overnight.
5. Garnish with your choice of toppings and enjoy!
